Ingredients
  

For the Sago Base:

  • ½ cup sago pearls about 100g
  • 2 cups water for cooking sago
  • Pinch of salt enhances flavor

For the Peach Component:

  • 2 ripe peaches approximately 1 cup when diced
  • 2 tbsp honey or sweetener of choice
  • ½ tsp lemon juice preserves color and enhances flavor

For the Matcha Milk:

  • 1 tsp high-quality matcha powder ceremonial grade for best flavor
  • ¼ cup hot water around 175°F/80°C, not boiling
  • ½ cup milk dairy or non-dairy
  • 1 tbsp honey or sugar optional, to taste

For Serving:

  • 1 cup ice cubes
  • Peach slices for garnish
  • Mint leaves optional garnish
  • Extra honey or simple syrup for adjusting sweetness

Instructions
 

  • Cook the sago pearls by bringing 2 cups of water to a boil, adding ½ cup sago pearls, and simmering for 10-15 minutes until they turn translucent. Drain and rinse under cold water, then set aside.
  • Prepare the peach component by dicing 1 ripe peach and blending or mashing it with 2 tablespoons of honey until smooth. If using a fork to mash, make sure the peaches are very ripe for the best texture.
  • Make the matcha milk by whisking 1 teaspoon of matcha powder with ¼ cup hot (not boiling) water until smooth with no clumps, then stir in ½ cup of milk of your choice and set aside to cool slightly.
  • Assemble your drink by placing the cooked sago pearls at the bottom of a tall glass, adding the peach puree on top, filling halfway with ice cubes, and gently pouring the matcha milk over.
  • Serve immediately with a long spoon, garnished with a peach slice if desired. Stir gently before drinking to enjoy all the flavors and textures together.
